Black Bean & Lime Chili

2 Boneless chicken breasts
3/4 C couscous
1 Vidalia onion, chopped
3 cl.garlic, minced
1 red pepper, chopped
1 green pepper, chopped
1 T  chili powder or
2 hot chili peppers, minced
14 oz. stewed tomatoes
15 oz.  black beans 
1/2 C  lime juice
1/4 C cilantro

In advance, boil chicken 5 min.,cool, and shred.

Prepare couscous according to package directions.

Sauté onion & garlic until soft. Add peppers and chili powder and cook for 1 min. 

Add tomatoes, beans, and

2/3 C water. Simmer 5 min.

Add chicken and simmer a bit longer to reduce liquid.

Stir in lime juice and cilantro. 

Serve over fluffed couscous.
