Market Bean Soup

Carbohydrates are nice, essential even. but now and then, especially after a long hard run, our bodies need a good shot of protein.   Here's an outstanding bean soup recipe that will provide some of those proteins. Pre-packaged bean mixes are available and easily found, or you can toss together your own mixture. The Italian sausage is optional, but if you decide to add it, Festival Foods has the best I've ever tried in this recipe.


1 lb. dry beans, peas & lentils
1 med. onion, chopped

1/2 C  celery, chopped

1  carrot, chopped

1 qt.  tomatoes

1.5  T lemon juice

2 T Worchestershire sauce

1 T basil

1 clove garlic, minced

1/2 t  pepper

3/4 lb. hot Italian sausage (bulk)

Grated parmesan


Soak beans overnight in lots of water.  Rinse & drain. 
Cover with 1" water.  Simmer 1 hour.

Add everything except sausage & cheese.  Simmer 1 more hour.

Meanwhile, cook sausage, drain. 

When second hour is up, add to soup. 

Continue to simmer another 2 hours.
Sprinkle with parmesan when serving.
