Spaghetti with Tuna, Tomatoes, and Orange

Well, as you can tell by looking at the list of upcoming races, the fall marathon season gets underway next month.  And  that means, of course, that runners (or at least those who've entered one or more fall marathons) will be looking for pasta recipes for their carbo-loading.  Here's a spaghetti recipe that's distinctively out of the ordinary -- it has a nice, light flavor that's more reminiscent of spring than fall, but what the heck, it's pretty good.



1 clove garlic, minced
8 oz. mushrooms, sliced

1 qt. Italian (plum) tomatoes, chopped

2 tsp. basil

1 tsp. rosemary

1/3 C.  orange juice

1 can tuna, drained

parsley, chopped


1 lb. spaghetti


Saute garlic and mushrooms.  

Add tomatoes and spices. 

Simmer 15 minutes.

Add orange juice and tuna.  Heat through.


Serve over cooked spahetti and garnish with parsley.
