Montana Jumbles

Here's a recipe for a dessert bar that I picked up recently at the Pine Butte Guest Ranch in Chouteau, Montana. When these bars are served after a long hike on mountain trails, the surviving hikers fall on them with vigor, leaving behind only a few crumbs as evidence of their existence. Highly recommended for folks doing trail marathons or ultras!

 


1 C. butter, softened

2 C.  brown sugar  

2 eggs        

1 tsp. vanilla

2 1/2 C. flour

3 C. regular oatmeal

1 tsp. salt

1 tsp. baking soda

12 oz. chocolate chips

1 can sweetened condensed milk

2 T.  butter, melted

1/2 tsp. salt

1/2 tsp vanilla

 

Cream butter and brown sugar.

Beat eggs and vanilla and add.

Mix flour, oatmeal, salt and baking soda.

Blend the two mixtures together. Pat 2/3 of mixture into a greased  9 X 13 pan.

Melt the chocolate chips.

Add the milk, melted butter, salt and vanilla. 

Pour over the mixture in the pan. 

Scatter the remaining dough mixture on top, gently pat down.

 

Bake at 350 degrees, 15-20 minutes.

Cool, then cut into 24 bars.
